I love peaches... but they are only in season in the summer so I make peach jam, enough to last me for a year until the peaches are back in season.
...and cutting up of said peaches...
...and after an hour of macerating with sugar and lemon juice...
....you're ready to start cooking!
It's a lot of work but, come winter, a little peach jam on a slice of toast or a hot biscuit....
...and you can enjoy the taste of summer again!
The recipe I use to make peach jam...
5 lb peaches for 10 cups peeled and diced
3 teaspoons lemon juice
5 cups sugar
- Mix cut up peaches with sugar and lemon juice in large bowl; let sit for 1 hour.
- In a large pot, bring peaches to a boil and boil for 25 minutes, stirring often. When jam starts to reach the jelling point, stir constantly.
- Remove from heat, pour into hot sterilized jars, seal.
- Process in hot water bath for 10 minutes.
- Remove and let cool on wire rack.
Sounds delicious. Peach is a flavor not commercially available (in a standard supermarket) in Australia.

ReplyDeleteI bought a huge bag of local peaches today at the farmer's market...love them! Plan to make a peach pie and then freeze some!
ReplyDeleteI don't know where you live, but here in Texas some of us add a little habernero pepper to our peach jam. Several ways to do it and you need to wear rubber gloves while handling the pepper. Notice that's singular. One of these hotties or even a half is plenty for the flavor. I add some of the liquid from cooking the peaches to a blender along with the pepper, then strain a little juice at a time into the cooking jam. Taste often and stop when you like the flavor.

We didn't get many peaches this year off our tree so we couldn't make anything.
Grandma usually makes jam or stews them.
You've been busy and boy that looks yummy! Was gonna tell ya about "quick peel method", but your peach pic says you've got the know-how. Oh, and Mr. T just left for the farmer's market to buy a(nother) bushel, so we can eat and freeze :-)

Yum! We have a peach tree, but we end up eating everything fresh. I have never made peach jam!
